Queijaria Canada
The Queijaria Canada (Canada Cheese factory) owned by Manuel Silveira is an old family dream. This small factory maintains the traditional cheese production method, in which, the owner only uses the milk from his own cows. The herd consists of about fifty cows, born and bred in the family farm, which are fed exclusively of grass, without any type of cow feed.
The Canada Cheese dates back to its origins, and is the result of a careful manufacturing process, from the milking of the cows, which is done to the sound of the classical music of Francisco de Lacerda, a maestro from São Jorge Island, to the curing process, using only a traditional dryer - curing room without the use of cold rooms.
The Canada cheese is small in size and weighs between 2.5 and 3.5 kg.
